Pots of Flavour: Warm Up with Mr Bigz’s Slow Cooker Brown Stew Chicken

In a recent blog, we introduced Stoke-shuka, a favourite autumnal dish from our Hubb Pots Project families in Stoke-on-Trent. Now, as the weather cools down even more, we’re featuring another warming recipe, brought to you by the one and only Mr Bigz Flavours.

This Brown Stew Chicken is a slow-cooker adaptation of a Caribbean classic, made easy and perfect for cozy nights. Here’s the recipe:

Chef Bigz shows in his step-by-step recipe tutorial how food is not just about ingredients – it’s about feeling good, grooving to tunes from Motown to Bob Marley, and putting a bit of yourself into every meal.

Directions:

Season the Chicken

Place the chicken pieces in a large bowl. Add garlic powder, onion powder, smoked paprika, chicken seasoning, and all-purpose seasoning. For ease, use “lazy” pre-chopped garlic and ginger, or chop fresh if you prefer. Mix everything together until the chicken is well-coated.

Add Extra Flavours

Pour in the cider vinegar, spring onions, bell pepper, chopped onions, and extra garlic if desired. Finally, add the browning sauce to give the chicken that rich, authentic colour. Massage the spices and ingredients into the chicken, then let it marinate in the fridge for at least 30 minutes, or overnight for deeper flavour.

Fry the Chicken

In a frying pan, heat the vegetable oil over medium-high heat. Add the marinated chicken pieces and fry until browned on all sides. (This step helps to lock in the flavours and gives the chicken a nice texture.)

Make the Sauce

In the same pan, remove excess oil but keep the flavourful residue. Add water, brown sugar, and ketchup, stirring well to create a thick, rich sauce. Let it simmer for a few minutes.

Slow-Cook

Place the browned chicken in a slow cooker. Pour the sauce over the chicken, add any leftover veggies, and mix gently. Cover with the lid and cook on high for 3-4 hours, or until the chicken is tender and falling off the bone.

Mr Bigz even suggests whilst the slow-cooker does its thing over the three hours of cooking, you’ll have time to get cleared up, even play a game of Monopoly, or relax before enjoying the Caribbean classic dish.

Serve and Enjoy

Once cooked, serve the brown stew chicken with rice and peas, plantains, or your favourite side. The tender chicken, rich sauce, and blend of spices will warm up any chilly autumn night, giving you the chance to enjoy the Caribbean flavours in the comfort of your own home.
